I'm really excited to share this recipe with you all. I found it a few years ago and it very quickly became a staple in my recipe file. While yes, its just another chicken recipe, when done right its a easy fix and the flavor in the chicken is so so good. I love to pair it up with a pasta tossed in lemon juice and zest and a yummy glass of pinot grigio.Ingredients
- 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 egg
- 1/2 cup grated Parmesan cheese
- 1 lb boneless skinless chicken breasts
- 1 tsp olive oil
- 2 tsp lemon juice
- Preheat oven to 350 degrees.
- In a shallow bowl, combine flour, salt, and garlic powder.
- In a second bowl, beat the egg.
- In a third bowl, place the Parmesan cheese.
- Coat the chicken in the flour mixture, then dip in the egg, then roll in the cheese.
- In a large skillet, brown the chicken in olive oil on both sides.
- Once browned, transfer to a greased baking dish.
- Drizzle with lemon juice and bake uncovered for 18-20 minutes or until the chicken reaches at least 160 degrees and the juices run clear.
